Warm Strawberry Compote
Warm fruit compote is a wonderful addition to a breakfast spread. It adds depth of flavor to pancakes, waffles, and oatmeal. Begin by putting fruit (I prefer strawberries, but any fruit will do, especially berries) in a medium saucepan. The trick here is to use frozen fruit, not fresh. One bag should do it. Add the juice of half a lemon, 1/2 C of sugar and a dash of cinnamon and bring the mixture to a boil, stirring frequently. It should begin to thicken on its own, and at this point, turn the heat to low ad let it reduce to a thick, syrup-like consistency.
While compote is still hot, top your breakfast food. Embellish your dish with whipped cream, a sprinkle of cinnamon, or even chocolate chips! This is a classic recipe you will love using over and over in your home kitchen! Serves 6
