Easiest Ever White Fish with Cream Sauce

 

A good Garlic Butter Cream Sauce is an elegant, yet simple recipe that every cook from beginner to professional Chef should have in their recipe box. It pairs perfectly with nearly every protein, pasta, and vegetable, quickly transforming dishes from boring to incredibly impressive. For the purpose of this tutorial, we will pair the sauce with lightly grilled whitefish. The ingredients you will need are as follows:

4 filets of whitefish                                                                                                                                                                                                           2 Lemons                                                                                                                                                                                                                           Salt and Pepper to taste                                                                                                                                                                                                  1 Medium to large stem of Dill                                                                                                                                                                                       1/2 Stick Unsalted Butter                                                                                                                                                                                               3 Cloves of Garlic, minced                                                                                                                                                                                             1 1/2 C. Heavy Cream

Begin by cutting one lemon in half, and marinate the fish filets with the juice and salt and pepper to your taste preference. Slice the second lemon into at least 8 even slices so that each filet will have two for garnish. Next, separate the Dill into 5 portions. One will be used as flavor in your sauce so this portion should be finely chopped, and the rest for garnish on your finished dish, and can remain whole.

Next, preheat oven to 350 degrees, and warm a grill pan on high heat for 5 minutes. In a second pan, over medium heat, melt butter, then add garlic, salt and pepper. Cook until garlic is fragrant and tender, it should only take a couple of minutes so be sure to stir it constantly so the butter does not brown. Add all the heavy cream and bring to a boil, stirring constantly. Simmer until sauce begins to thicken and turn heat to low, and add chopped dill. Let the sauce set up over low heat while you prepare your fish, or for about 5 minutes.

Now, your grill pan should be very hot. Sprinkle a few drops of olive oil in the pan so that the filets do not stick. Place fish in the grill pan and let it sear on one side for about a minute. Remove from grill pan and place it grill marks up on a sheet pan. Place in the preheated oven for 3-5 minutes. Remove from oven and place directly on your service plate. Add a generous spoonful of the Garlic Butter Cream Sauce, long ways, down the center of each filet. Next add a sprig of Dill, and top with two lemon wheels. Serve immediately.
